"Aizu-Yamashio Ramen" (salt-flavoured ramen) is now popular even out side of Kitashiobara village, and it has been known as a new 'local food'. "Yamashio" (salt) itself has been taken from the hot spring "Ooshio-onsen" source, then it needs to be boiled and dried naturally. This salt contains many minerals which is the key to create perfectly light and smooth soup.
